Interview: Sous Chef Charles Stuart

If you’ve eaten at Angler’s restaurant during your stay here at Abaco Beach Resort then you’ve probably had the pleasure of enjoying one of the creations of our fabulous Sous Chef, Charles Stuart who is definitely making a name for himself here in the Out Islands of the Bahamas!

He has cooked for celebrities and guests alike, in kitchens and out on private cays and beaches during private getaway, always giving his creations a unique spin. Chef was kind enough to sit down with us and answer some questions to give you an idea of where he’s come from, what his favorites dishes, the celebrities he’s cooked for, and the dining experience at Abaco Beach Resort!

  1. How did you find your way into a career as a Chef?

“I knew from my first year in high school that I wanted to be a Chef. Most of my summer breaks I worked at different hotels just to learn more and get knowledge from experienced Executive Chefs in the food and beverage industry. In fact it was one of my teachers who introduced me to her husband who was an Executive Chef that I got my first training in the culinary field and he also got me a job in the kitchen as soon as I graduated high school.”

  1. Which celebrities have you cooked for?

“Throughout my years in the hotel industry I have cooked for many celebrities – a few very memorable ones were John Travolta, Alicia Keys, Ryan Seacrest, Beyoncé, Jay Z, Justin Timberlake, Jessica Biel, Leonardo DiCaprio, Scottie Pippen and Kourtney Kardashian.”

  1. What items on our menu here at Abaco Beach Resort are your favorites to prepare?

I really like creating the Lobster Tail , Rack of Lamb and Sesame Seared Crusted Yellowfin Tuna.

  1. What is your ‘go to’ favorite meal that you never get tired of?

I love fresh fish so the Macadamia Nut Crusted Grouper would be my favorite ‘go to’ item that I cant get tired of!

  1. What are some of your favorite pastimes that you enjoy here in the Bahamas Out Islands?

Most of my past times here in the Bahamas I’ve enjoyed a lot just by meeting new and returning guests. I have had the opportunity to work on a  yacht for a week as a Private Chef and we travelled to the different cays like Hope Town, Green Turtle Cay, Guana Cay, Treasure Cay and Man O War Cay.

I also doing a lot of sightseeing in the Abacos such as bird watching, kayaking and fishing.

  1. If you could tell all the guests here at Abaco Beach Resort one thing about the meals they’re enjoying from your kitchen, what would it be?

The one good thing about eating the meals from our kitchen is that the presentation and the taste of every meal will always be excellent when I’m cooking for the guests. I always try and make sure that guests have an awesome meal experience that makes them want to tell their friends or family members about.

  1. What is the best thing about being a Chef here?

“The best part of being a Chef at the Abaco Beach Resort is that I get to bring my creativity to the menus in terms of creating daily specials and menu planning. I also get to share my talents and knowledge that were passed to me on to my line cooks and staff.
